水解酶

水解酶 (Hydrolases, EC 3) 通常用作生化催化剂，它们利用水破坏化学键,从而将较大的分子分解成较小的分子。常见的水解酶有酯酶，包括脂肪酶、磷酸酶、糖苷酶、肽酶和核苷酶。水解酶对机体很重要，它们具有降解特性。例如在脂质中，脂肪酶有助于将脂肪和脂蛋白以及其他较大分子分解成较小的分子，如脂肪酸和甘油，其中脂肪酸和其他小分子用于合成和作为能量来源。在 EC 编号系统中，水解酶被归类为 EC 3。
